Carrot Corn Curd Rice Recipe/Carrot Corn Daddojanam - Healthy Breakfast Recipe

Ingredients

  • 1 cup Cooked Rice
  • 1/2 cup Fresh Curd
  • 1/2 cup Milk
  • 1/4 cup Sweet Corn
  • 1/4 cup chopped Carrot
  • 1 Green Chilli chopped
  • 1 sp chopped Ginger
  • Salt to taste
  • For Popu :
  • 1/2 sp Mustard Seeds
  • 1/2 sp Chana Dal
  • 1/2 sp Urad Dal
  • 1 Red Chilli crocked
  • few chopped Coriander Leaves
  • Curry Leaves
  • 11/2 sp Oil

Instructions

  1. Combine and cook chopped carrot and sweet corn with little salt, once done keep it aside.
  2. In a wide bowl spread the cooked rice, when cooled add curd/yogurt, milk, salt and mix very well.
  3. Heat oil in a pan add popu ingredients and fry, once done add green chillies, curry leaves, ginger and fry for 30 secs.
  4. Then add cooked carrot corn mix, coriander leaves and stir-fry for a couple of mins after that turn off the flame and allow it to cool.
  5. Once cooled pour the fried carrot mix and mix everything well, now carrot corn curd rice is ready.
  6. Transfer into a serving bowl and garnish with chopped coriander leaves and serve.
