Carrot Coconut Fry / Carrot Kobbari Vepudu / Carrot Coconut Porial – Fry Curries

Ingredients

  • 1 cup chopped Carrot Pieces
  • Few Fresh Coconut Pieces
  • 1 pinch Turmeric powder
  • 3 Green Chillies
  • Salt to taste
  • For Popu 
  • 1/2 sp Mustard seeds
  • 1/2 sp Urad dal
  • 1 Red Chilli
  • 2 sp Oil
  • Curry leaves

Instructions

  1. Wash, peel and chop carrots into small pieces and cook along with enough salt and turmeric Powder, once done drain them.
  2. In the meantime, grind coconut and green chillies into a coarse powder with out water.
  3. Heat oil in pan add popu ingredients and fry, when done add curry leaves, cooked carrot pieces and mix well.
  4. Then add ground coconut mixture and mix well until the curry gets well coated with this mixture.
  5. Continue to cook on low flame with cover for one min, after that turn off the flame & transfer into a serving bowl.
  6. Carrot coconut fry is ready to serve, serve with hot white rice or rotis.
