Carrot Coconut Fry / Carrot Kobbari Vepudu / Carrot Coconut Porial – Fry Curries
Ingredients
- 1 cup chopped Carrot Pieces
- Few Fresh Coconut Pieces
- 1 pinch Turmeric powder
- 3 Green Chillies
- Salt to taste
- 1/2 sp Mustard seeds
- 1/2 sp Urad dal
- 1 Red Chilli
- 2 sp Oil
- Curry leaves

Instructions
- Wash, peel and chop carrots into small pieces and cook along with enough salt and turmeric Powder, once done drain them.
- In the meantime, grind coconut and green chillies into a coarse powder with out water.
- Heat oil in pan add popu ingredients and fry, when done add curry leaves, cooked carrot pieces and mix well.
- Then add ground coconut mixture and mix well until the curry gets well coated with this mixture.
- Continue to cook on low flame with cover for one min, after that turn off the flame & transfer into a serving bowl.
- Carrot coconut fry is ready to serve, serve with hot white rice or rotis.
