Karivepaku Vellulli Podi / Curry Leaves Powder with Garlic Flavour

Ingredients

  • 1 sp Coriander Seeds
  • 1/2 sp Cumin Seeds
  • 1 sp Urad Dal
  • 8 Red Chillies
  • 1 cup Curry Leaves
  • 2 inches Tamarind Flake
  • 3 Garlic Cloves
  • enough Salt
  • 1/2 sp Oil

Instructions

  1. Heat oil in a pan add coriander, cumin seeds, urad dal, red chillies and stir-fry till it turns golden brown color, then transfer on a plate, add curry leaves to the same pan and stir, fry them until lightly crisp, then remove from the heat and allow it cool.
  2. Once cooled, first grind fried red chilli mixture, salt, tamarind into powder then add fried curry leaves, garlic cloves and grind again into a coarse powder. Now garlic flavour curry leaves idly powder is ready, store it in an air tight container.
