Kaju Tomato Gravy Curry Recipe/Cashew Tomato Masala/Kaju Tomato Curry-Gravy Curries
Ingredients
- 1 cup Tomato Puree
- 1 big Onion chopped
- 2 Green Chillies roughly chopped
- 15 Cashew Nuts
- 1/2 sp Ginger Garlic Paste
- 1 sp Red Chilli Powder
- 1/2 sp Coriander Powder
- 1 pinch Turmeric Powder
- 2 sp Kasuri Methi
- 1" Cinnamon Stick
- 1 Bay leaf
- 4 Cloves
- 2 sp Butter
- 1/4 cup Fresh Cream
- Salt to taste

- 2 Onion slices
- 2 Lemon wedges
- 2 sp Butter

Instructions
- Heat 2 sp oil in a pan add cashew nuts and roast them until light golden brown and remove from the pan and keep aside.
- In the same pan add chopped onions, green chillies and fry till soft then remove from the pan, let it cool for a couple of mins.
- Once cooled grind them into a smooth paste along with ginger garlic paste and keep aside.
- Heat butter in a pan add bay leaf, cloves, cinnamon and fry for 30 secs, then add onion paste and cook for 2-3 mins on low flame.
- Add turmeric powder, red chilli powder, coriander powder and mix well.
- Add tomato puree, salt and stir-cook for 2 mins then add 1/2 cup of water and mix well, allow it to cook for 3 mins on low flame adding water if necessary.
- Add fried cashews, chopped coriander leaves, crushed kasuri methi and mix well, finally add fresh cream and mix very well.
- Now kaju tomato curry is ready, transfer into a serving bowl and top it with butter and serve hot with chapati or roti.
