Bottle Gourd Soya Curry / Soya Sorakaya Kura / Lauki ka Curry with Soya Granules

Ingredients

  • 2 cups chopped Anapakaya/Sorakaya/Bottle Gourd Pieces
  • 1/4 cup Soya Granules
  • 1 Onion chopped
  • 2 Green Chillies chopped
  • 2 sp grated fresh Coconut
  • 1 pinch Turmeric Powder
  • 1 sp Red Chilli Powder
  • For Popu :
  • 1/2 sp Mustard Seeds
  • 1/2 sp Urad Dal
  • 1/2 sp Chana Dal
  • 1 Red Chilli crocked
  • Curry Leaves
  • 2 sp Oil

Instructions

  1. Wash, peel and chop bottle gourd into small pieces, wash & soak soya granules in hot water for 15 mins and set aside.
  2. Heat oil in a pan add popu ingredients and fry, once done add curry leaves, chopped bottle gourd pieces and stir. Add salt, turmeric powder and mix well.
  3. Sprinkle little water and cook with cover, keep stirring, when the pieces are soft add squeezed soya granules and stir well.
  4. Then add grated coconut, red chilli powder and mix well, cover and cook for a couple of mins. After that turn of the flame and transfer into a serving bowl, now soya sorakaya curry is ready to serve, serve hot with rice or roti.
