Amaranth Leaves Carrot Fry Curry / Thotakura Carrot Vepudu

Ingredients

  • 2 cups chopped Thotakura
  • 1 cup grated Carrot
  • 1 big Onion chopped
  • 2 Green Chillies chopped
  • 1 pinch Turmeric Powder
  • 1/2 sp Red Chilli Powder
  • 1/2 sp Curry Powder
  • Salt to taste
  • For Popu :
  • 1/2 sp Mustard Seeds
  • 1/ sp Urad Dal
  • 1 Red Chilli crocked
  • Curry Leaves
  • 2 sp Oil

Instructions

  1. Heat oil in a pan add popu ingredients and fry, once done add curry leaves, chopped onion, green chillies and stir.
  2. Then add turmeric powder, little salt (for onion) and fry until soft. Now add chopped thotakura and mix, cover with a lid and cook for a couple of mins.
  3. Next add grated carrot, salt and saute well. Cover and cook on low flame, keep on stirring continuously.
  4. Add curry powder, red chilli powder and stir well, let it fry for a minute.
  5. Now Thotakura carrot fry is ready to serve, serve with rice and roti.
