Tomato Rice Recipe/Tomato Bath – How to make Tomato Rice - 3rd Method

Ingredients

  • 1 cup Cooked Rice
  • 3 Tomatoes finely chopped
  • 2 Green Chillies slit lengthwise
  • 1 Onion finely chopped
  • chopped Coriander Leaves
  • few Curry Leaves
  • 2 Elaichi Pods
  • 3 Cloves
  • 1 piece Cinnamon
  • 3 sp Oil
  • Salt to taste
  • For Paste :
  • fistful Fresh Coconut Pieces
  • 1" Ginger roughly chopped
  • 1 small Cinnamon piece
  • 4 Garlic Cloves
  • 2 Elaichi Pods
  • 4 Cloves

Instructions

  1. Heat oil in a pan add cloves, cinnamon, elaichi pods and fry for 5 secs, then add chopped green chillies, onion, curry leaves and fry until soft.
  2. In the meantime, combine the paste ingredients and grind into a coarse paste and keep aside.
  3. Add chopped tomatoes to pan, mix and cook on low flame, when the tomatoes are well cooked, then add ground coconut masala paste and stir- cook for 2 mins on a low flame.
  4. Once done add cooked rice, salt, chopped coriander leaves and mix everything well and fry for high flame for 1 min, then turn off the flame and transfer into a serving bowl, now tomato rice is ready to serve, serve hot with onion raitha.
