Vankaya Thotakura Pappu/Brinjal Amaranth Leaves Dal/Eggplant Amaranth Leaves Dal
Ingredients
- 1 small cup Toor Dal
- 2 no Brinjal roughly chopped
- 1 cup chopped Amarnath Leaves
- 1 Green Chilli chopped
- 1 Onion chopped
- 1 Tomato chopped
- 1 pinch Turmeric Powder
- 1 sp Red Chilli Powder
- 1 small piece Tamarind
- Salt to taste
- 1/2 sp Mustard Seeds
- 1/4 sp Cumin Seeds
- 1 pinch Hing
- 1 Red Chilli
- 3 Garlic crushed
- Curry Leaves
- 2 sp Oil

Instructions
- Combine above all ingredients except salt and pressure cook with 1 cup of water for 3 whistles. Allow it cool for a couple of mins, once done remove the lid and mix well.
- Heat oil in a pan add popu ingredients and fry, once done add crushed garlic, curry leaves and fry for a while. Then add cooked brinjal dal mixture along with salt and stir well, let it cook for a couple of mins. Turn off the flame and transfer into a serving bowl. Now vankaya thotakur/brinjal amaranth leaves dal is ready. Serve with rice or roti.
