Carrot Mango Rice Recipe / Carrot Green Mango Rice / Carrot Mamidikaya Pulihora

Ingredients

  • 11/2 cup Cooked Rice
  • 1/2 cup grated Carrot
  • 1/2 cup grated Mango
  • 2 Green Chillies slit lengthwise
  • 1 pinch Turmeric Powder
  • fistful Peanuts
  • Salt to taste
  • For Popu :
  • 1/2 sp Mustard Seeds
  • 1/2 sp Cumin Seeds
  • 1 Red Chilli crocked
  • 1 pinch Inguva
  • Curry Leaves
  • 4 sp Oil

Instructions

  1. Wash, peel and grate raw mango, carrot and keep aside. Place boiled rice in a bowl and keep aside.
  2. Heat oil in a pan add peanuts and fry, then remove from the pan and keep aside. Add mustard, cumin seeds, crocked red chilli, inguva to the same pan and fry.
  3. When they splutter add curry leaves, green chillies and stir for a while, then add grated carrot, turmeric powder and mix well. let it cook for a couple of mins on low flame.
  4. Once the carrot is soft, then add grated raw mango and stir-cook for a min.
  5. Once done add it to cooked rice along with enough salt and mix everything well,
  6. Then add fried peanuts to it and mix very well. Now carrot mango rice/carrot mamidikaya pulihora is ready to serve.
