Carrot Mango Rice Recipe / Carrot Green Mango Rice / Carrot Mamidikaya Pulihora
Ingredients
- 11/2 cup Cooked Rice
- 1/2 cup grated Carrot
- 1/2 cup grated Mango
- 2 Green Chillies slit lengthwise
- 1 pinch Turmeric Powder
- fistful Peanuts
- Salt to taste
- 1/2 sp Mustard Seeds
- 1/2 sp Cumin Seeds
- 1 Red Chilli crocked
- 1 pinch Inguva
- Curry Leaves
- 4 sp Oil

Instructions
- Wash, peel and grate raw mango, carrot and keep aside. Place boiled rice in a bowl and keep aside.
- Heat oil in a pan add peanuts and fry, then remove from the pan and keep aside. Add mustard, cumin seeds, crocked red chilli, inguva to the same pan and fry.
- When they splutter add curry leaves, green chillies and stir for a while, then add grated carrot, turmeric powder and mix well. let it cook for a couple of mins on low flame.
- Once the carrot is soft, then add grated raw mango and stir-cook for a min.
- Once done add it to cooked rice along with enough salt and mix everything well,
- Then add fried peanuts to it and mix very well. Now carrot mango rice/carrot mamidikaya pulihora is ready to serve.
