Carrot Fenugreek Leaves Fry/Carrot Methi Sabji/Carrot Menthi Kura Fry

Ingredients

  • 2 nos Carrots
  • 1 cup chopped Methi Leaves / Menthi Kura
  • 2 Green Chillies chopped
  • 1 Onion chopped
  • 1 pinch Turmeric Powder
  • 1/2 sp Ginger Garlic Paste
  • 1 sp Coriander Powder
  • 1/2 sp Red Chilli Powder
  • Salt to taste
  • For Popu :
  • 1/2 sp Mustard Seeds
  • 1/2 sp Chana Dal
  • 1/2 sp Urad Dal
  • 1 Red Chilli crocked
  • Curry Leaves
  • 2 sp Oil

Instructions

  1. Wash peel carrots and cut into small pieces and keep aside.
  2. Clean wash methi leaves and chop into small pieces and keep it aside.
  3. Heat oil in a pan add popu ingredients and fry.
  4. Add curry leaves, chopped onion, green chillies and stir.
  5. Now add carrot pieces, turmeric powder, salt & saute well.
  6. Sprinkle little water and stir, cover and cook on low flame for 5 mins.
  7. Next add ginger garlic paste, chopped methi leaves and mix well.
  8. Cover and continue to cook on low flame for few minutes.
  9. Once done add coriander powder, red chilli powder and stir.
  10. Let cook one more min then remove from heat and transfer into a bowl.
  11. Carrot methi sabji is ready to serve, serve with rice or chapatis.
