Chikkudu Ginjalu Tomato Kura / Indian Broad Bean Seeds Tomato Curry

Ingredients

  • 1 cup Fresh Chikkudu Ginjalu
  • 1 Onion chopped
  • 1 Tomato chopped
  • 2 Green Chillies chopped
  • 1 pinch Turmeric Powder
  • 1/2 sp Red Chilli Powder
  • Salt to taste
  • For Powder :
  • 2 sp Peanuts
  • 1 sp Coriander Seeds
  • 2 sp grated Dry Coconut
  • 3 Garlic Cloves
  • For Popu :
  • 1/2 sp Mustard Seeds
  • 1/2 sp Urad Dal
  • 1 Red Chilli crocked
  • Coriander Leaves
  • Curry Leaves
  • 2 sp Oil

Instructions

  1. Wash and pressure cook chikkudu ginjalu with salt & keep aside.
  2. Heat a khadai add peanuts, coriander seeds and dry roast, once done grind into a coarse powder along with garlic & dry coconut.
  3. Heat oil in a pan add popu ingredients and fry for about 2 mins then add curry leaves, chopped onion, green chillies and stir.
  4. When the onions are tender add tomato pieces and mix well cook them until soft, then add cooked chikkudu ginjalu & stir.
  5. Add turmeric powder, red chilli powder, ground peanut powder and stir well, let it cook for 2-3 mins with cover.
  6. After that turn off the flame & transfer into a serving bowl, garnish with coriander leaves and serve, serve with rice or roti.
