Chilagadadumpa Vankaya Kura / Sweet Potato Brinjal Curry
Ingredients
- 1 no Sweet Potato
- 3 Brinjals chopped
- 1 Onion chopped
- 2 Green Chillies chopped
- 1 Tomato chopped
- 1/2 sp Red Chilli Powder
- 1 pinch Turmeric Powder
- Salt to taste
- 1/2 sp Mustard Seeds
- 1/2 sp Chana Dal
- 1/2 sp Urad Dal
- 1 Red Chilli Crocked
- 3 sp Oil
- Curry Leaves

Instructions
- Wash, peel sweet potato and cut into small cubes.
- Heat oil in a pan add popu ingredients and fry.
- When they splutter add curry leaves, green chilli, onion pieces and fry.
- Once the onions turn soft add in tomato pieces and stir-fry for a couple of mins
- Now add sweet potato pieces and stir well.
- Sprinkle little water and mix well, cook with cover on low to medium flame.
- Keep stirring in middle, when it 3/4 done add chopped brinjal and mix well.
- Add in salt, turmeric powder, red chilli powder and stir well.
- Close the lid again and cook on low flame until the pieces are completely cook.
- When the curry is done, remove from the heat and transfer into a serving bowl.
- Now sweet potato brinjal curry is ready to serve. Serve hot with rice and rotis.
