Chilagadadumpa Vankaya Kura / Sweet Potato Brinjal Curry

Ingredients

  • 1 no Sweet Potato
  • 3 Brinjals chopped
  • 1 Onion chopped
  • 2 Green Chillies chopped
  • 1 Tomato chopped
  • 1/2 sp Red Chilli Powder
  • 1 pinch Turmeric Powder
  • Salt to taste
  • For Popu :
  • 1/2 sp Mustard Seeds
  • 1/2 sp Chana Dal
  • 1/2 sp Urad Dal
  • 1 Red Chilli Crocked
  • 3 sp Oil
  • Curry Leaves

Instructions

  1. Wash, peel sweet potato and cut into small cubes.
  2. Heat oil in a pan add popu ingredients and fry.
  3. When they splutter add curry leaves, green chilli, onion pieces and fry.
  4. Once the onions turn soft add in tomato pieces and stir-fry for a couple of mins
  5. Now add sweet potato pieces and stir well.
  6. Sprinkle little water and mix well, cook with cover on low to medium flame.
  7. Keep stirring in middle, when it 3/4 done add chopped brinjal and mix well.
  8. Add in salt, turmeric powder, red chilli powder and stir well.
  9. Close the lid again and cook on low flame until the pieces are completely cook.
  10. When the curry is done, remove from the heat and transfer into a serving bowl.
  11. Now sweet potato brinjal curry is ready to serve. Serve hot with rice and rotis.
