Kandagadda Ullipaya Pulusu/Elephant Yam Onion Stew/Suran Onion Stew

Ingredients

  • 1 small Kanda Gadda Piece
  • 2 sp Tamarind Paste
  • 2 Green Chillies chopped
  • 1 Onion finely chopped
  • 1 Tomato chopped
  • 1 pinch Turmeric Powder
  • 1/2 sp Red Chilli Powder
  • 2 sp grated Jaggery
  • 1 sp Rice Flour/Besan
  • Salt to taste
  • For Popu :
  • 1/2 sp Mustard Seeds
  • 1/4 sp Cumin Seeds
  • 1/4 sp Methi Seeds
  • 1/2 sp Chana Dal
  • 1/2 sp Urad Dal
  • 1 Red Chilli Crocked
  • 1 pinch Hing
  • Coriander Leaves
  • Curry Leaves
  • 2 sp Oil

Instructions

  1. Wash, peel kanda gadda and cut into small pieces, cook with turmeric powder and keep aside. Heat oil in a pan add popu ingredients and fry, once done add curry leaves, green chilli, onion pieces and fry till soft. Then add chopped tomato and cook for a while.
  2. Add cooked yam pieces and mix well. Now add tamarind paste, 2 cups of water and mix well. Add salt, turmeric powder, red chilli powder, jaggery and let it boil for a few mins. Mix rice flour in 1/4 cup of water and pour it in the cooked stew and stir well.
  3. Add chopped coriander leaves and cook for a couple of mins until the stew thickens, remove from flame and transfer into a serving bowl. Now kanada gadda ullipaya pulusu is ready to serve, serve with steamed white rice along with dal.
