Ponnaganti Aaku Palli podi Kura / Water Amaranth Leaves Dry Curry with Peanut Powder

Ingredients

  • 1 cupĀ chopped Water Amaranth Leaves/Ponnaganti Aaku
  • 1 pinch Turmeric Powder
  • enough Salt
  • For Powder :
  • 2 sp Coriander Seeds
  • 3/4 sp Cumin Seeds
  • 6 or 7 Red Chillies
  • fistful Dry Coconut Pieces
  • fistful Peanuts
  • 4 Garlic Cloves
  • For Popu :
  • 1/2 sp Mustard Seeds
  • 1/2 sp Urad Dal
  • 1/4 sp Chana Dal
  • 1 Red Chilli
  • 2 sp Oil

Instructions

  1. Heat a pan, put all above powder ingredients except coconut and fry for a few mins then add coconut pieces and fry for a min, once done transfer to a plate and allow it to cool. Once cooled grind them into a course powder along with garlic cloves.
  2. Heat oil in a pan add popu ingredients and fry. Once done add chopped ponnaganti leaves and stir. Sprinkle very little water and mix well. Cover with a lid, keep cooking on a slow flame till water amaranth leaves are half done.
  3. Then add salt, turmeric powder and mix well, continue to cook until fully cooked. Now add 2 sp ground palli powder and mix everything well and cook for a while. Turn off the flame and transfer to a serving bowl. Water amaranth leaves/ponnaganti aaku palli podi curry is ready, serve with rice or roti.
