Thotakura Onion Fry/Amaranth Leaves Curry/Thotakura Vepudu

Ingredients

  • 2 cups chopped Thotakura
  • 1 Onion chopped
  • 3 Green Chillies slit lengthwise
  • 1 pinch Turmeric Powder
  • Salt to taste
  • For Popu :
  • 1/2 sp Mustard Seeds
  • 1/2 sp Urad Dal
  • 1 Red Chilli crocked
  • Curry Leaves
  • 2 sp Oil

Instructions

  1. Heat oil in a pan add popu ingredients and fry for 2 mins.
  2. Once done add curry leaves, onion, green chilli pieces and stir.
  3. Fry until the onions are tender add chopped thotakura, turmeric powder, salt and mix, cover and cook on low flame.
  4. If required add little water and cook with cover.
  5. When it done remove the lid and fry for 2 mins with out cover.
  6. Thotakura kura is ready to serve, serve with rice or chapati.
