Vangi Poha Recipe / Flattened Rice With Brinjal / Aval Vangi Bath
Ingredients
- 1 cup Thick Poha / Flattened Rice
- 3 no Brinjal / Eggplant
- 1 Onion finely chopped
- 1 sp chopped Ginger
- 3 Green Chillies chopped lengthwise
- 1/4 sp Turmeric Powder
- Salt to taste
- 1/2 sp Mustard Seeds
- 1/2 sp Chana Dal
- 1/2 sp Urad Dal
- 2 dry Red Chillies
- 5 to 6 Cashews
- Curry Leaves
- 2 sp Oil

Instructions
- Wash and soak poha for 2 mins, then drain well and keep aside, wash and cut brinjal into thin long stripes.
- Heat oil in a pan add cashew nuts and fry, then remove from the pan and keep aside, add popu ingredients to the same pan and fry.
- Once done add green chillies, onion, curry leaves and stir for 1 min, then add chopped brinjal and stir, add turmeric powder, salt and mix well.
- Sprinkle little water over it and mix well, cook with cover till the curry is done add drained poha to it and mix thoroughly.
- Let it cook with lid for couple of minutes, turn off the flame and transfer into a serving bowl.
- Now vangi poha is ready to serve, garnish with fried cashews and serve hot.
