Ingredients

  • 1/4 kg Chikkudukayalu
  • 4 no Vankayalu/Eggplant
  • 1 pinch Turmeric Powder
  • Salt to taste

For Popu :

  • 1/2 sp Mustard Seeds
  • 1/2 sp Urad Dal
  • 1/2 sp Chana Dal
  • 1 Red Chilli crocked
  • Curry leaves
  • 3 sp Oil  

Instructions

Wash and tear each chikkudukayalu into 3 or 4 pieces and cook them with enough salt and water.

Wash and cut brinjal into small pieces and keep in salt water. Heat oil in a pan add popu ingredients and fry, once done add curry leaves and fry. Then add in brinjal pieces, turmeric powder, salt for brinjal pieces and mix well.

Sprinkle very little water and cook with cover until the eggplant pieces are soft. Then add cooked broad beans, mix well and fry for a couple of mins.

Then add curry powder and mix everything well. Cook with cover for a while, then turn off the flame and transfer into a serving bowl. Now vankaya chikkudukaya kura/brinjal broad beans curry is ready to serve. Serve with rice and roti.
