Veg Khichdi Recipe / Vegetables Khichdi / Veg Pongal

Ingredients

  • 1 cup Rice
  • 1/2 cup Moong Dal
  • 1 Carrot chopped
  • 2 Potatoes chopped
  • 4 nos Beans chopped
  • 3 Green Chillies chopped
  • 1 sp chopped Ginger
  • 1 pinch Turmeric Powder
  • 1/2 sp Cumin Seeds
  • 1 sp Pepper Corn
  • Salt to taste
  • Curry Leaves
  • 5 sp Oil
  • 3 cups Water

Instructions

  1. Wash rice+moong dal and soak them for 10 mins and keep aside.
  2. Heat oil in a khadai add cumin seeds, pepper corn and fry, once done add green chillies, curry leaves and fry.
  3. Now add chopped vegetables, turmeric powder into it and fry for a couple of mins on low flame.
  4. Then add soaked rice and dal mixture and fry for a while. Remove from fire and place the fried ingredients to a cooker bowl and pressure cook with enough salt and 3 cups of water.
  5. When it done transfer into a serving bowl. Now vegetable khichdi is ready to serve, serve with coconut chutney or allam chutney.
